Canadian Aubergine Gratin
A roasted vegetable gratin dish featuring Canadian aubergine.
Ingredients
- β2 Baby aubergine
- β Ovenfor baking
- β2 tablespoons Olive oil
- β2 cloves Garlic
- β1 cup Grated cheese
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper

Preheat the oven to 375Β°F (190Β°C).

Cut the baby aubergine in half lengthwise and place on a baking sheet.

Brush the aubergine with olive oil and season with salt and black pepper.

Roast the aubergine in the oven for 20-25 minutes, or until tender.

While the aubergine is roasting, mix the grated cheese with minced garlic.

Once the aubergine is done, remove it from the oven and top each half with the cheese mixture.

Return the aubergine to the oven and bake for an additional 5-7 minutes, or until the cheese is melted and bubbly.

Remove the aubergine from the oven and let it cool for a few minutes before serving.
