Oven Roasted Croatian Chickpea Salad
A delicious and healthy salad with roasted chickpeas and a hint of Croatian flavor. This salad is perfect for a light lunch or dinner.
Ingredients
- β1 can (14.5 oz) chickpeasdrained and rinsed
- β2 tablespoons olive oilfor roasting
- β1 teaspoon cuminground
- β1 teaspoon paprikaground
- βto taste salt
- βto taste pepper
- β1 medium cucumbersliced
- β1 medium tomatodiced
- β1/2 medium red onionthinly sliced
- β1/4 cup fresh parsleychopped

1. Preheat the oven to 400Β°F (200Β°C).

2. Rinse the chickpeas and pat them dry with a paper towel.

3. In a bowl, mix together the cumin, paprika, salt, and pepper.

4. Add the chickpeas to the bowl and toss to coat with the spice mixture.

5. Drizzle the olive oil over the chickpeas and toss to coat.

6. Spread the chickpeas on a baking sheet and roast in the oven for 30-40 minutes, or until crispy.
