Ethiopian Misir Wot
A flavorful and spicy Ethiopian stew made with red lentils, onions, garlic, and spices, served hot over injera bread.
Ingredients
- β1 cup Red Lentils
- β2 medium Onions
- β3 cloves Garlic
- β2 inches Ginger
- β2 tablespoons Misir Spice Mix
- β2 tablespoons Olive Oil
- β2 cups Vegetable Broth
- β1 cup Water

Preheat the oven to 375Β°F (190Β°C).

In a blender or food processor, puree the onions, garlic, and ginger until smooth.

Heat the olive oil in a large saucepan over medium heat. Add the pureed onion mixture and cook for 5 minutes, stirring occasionally.

Add the misir spice mix and cook for an additional 1-2 minutes, stirring constantly.

Add the red lentils, vegetable broth, and water to the saucepan. Bring the mixture to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the lentils are tender.

Season the wot with salt and pepper to taste.

Serve the Ethiopian Misir Wot hot over injera bread, garnished with chopped fresh cilantro if desired.
