Ethiopian Chorizo Gomen
A flavorful and spicy Ethiopian-inspired dish made with chorizo, gomen (collard greens), and spices. Roasted to perfection in the oven.
Ingredients
- β1 pound, sliced Chorizo
- β2 bunches, chopped Gomen
- β1 medium, chopped Onion
- β3 cloves, minced Garlic
- β2 tablespoons Ghee or oil
- β1 teaspoon each Spices (berbere, turmeric, cumin)
- βto taste Salt and pepper

Preheat oven to 400Β°F (200Β°C).

In a large bowl, combine chopped gomen, onion, and garlic.

In a separate pan, heat ghee or oil over medium heat. Add sliced chorizo and cook until browned.

Add berbere, turmeric, cumin, salt, and pepper to the pan with chorizo. Stir to combine.

Add the cooked chorizo mixture to the bowl with gomen mixture. Toss to combine.

Transfer the mixture to a baking dish and roast in the oven for 20-25 minutes, stirring occasionally.

Serve hot, garnished with additional ghee or spices if desired.
