Beef Au Jus
Tender beef cooked in a rich, flavorful au jus sauce, served with roasted vegetables.
Ingredients
- β2 lbs Beef (2 lbs)
- β4 Carrots (4)
- β2 stalks Celery (2 stalks)
- β1 Onion (1)
- β1 cup Red wine (1 cup)
- β2 cups Beef broth (2 cups)
- β2 tbsp Tomato paste (2 tbsp)
- βto taste Herbs (thyme, rosemary)

Preheat oven to 300Β°F (150Β°C).

Season the beef with salt and pepper.

Sear the beef in a hot pan until browned on all sides.

Transfer the beef to a pot and add the red wine, beef broth, tomato paste, and herbs.

Bring the mixture to a boil, then cover and transfer to the preheated oven.

Roast the beef for 2-3 hours, or until tender.

Meanwhile, toss the carrots and celery in a bowl with olive oil and season with salt and pepper.

Spread the vegetables on a baking sheet and roast in the oven for 20-25 minutes, or until tender.

Slice the beef against the grain and serve with the roasted vegetables and au jus sauce.

Strain the au jus sauce through a fine-mesh sieve into a clean pot and bring to a simmer.
