German Squash Casserole
A hearty and flavorful German-inspired casserole featuring roasted squash as the main ingredient.
Ingredients
- ●1 medium, peeled and cubed Butternut SquashAbout 2 lbs
- ●2 tbsp Olive Oil
- ●1 medium, chopped Onion
- ●2 cloves, minced Garlic
- ●2 tbsp All-purpose Flour
- ●1 cup Vegetable Broth
- ●1 cup Milk
- ●1/2 cup BreadcrumbsPanko or regular
- ●1 cup Grated Cheddar Cheese
- ●to taste Salt
- ●to taste Black Pepper

Preheat the oven to 400°F (200°C).

Toss the cubed squash with 1 tablespoon of olive oil, salt, and pepper on a baking sheet. Roast for 30 minutes.

In a large skillet, sauté the chopped onion and minced garlic until softened. Add the flour and cook for 1 minute.

Gradually pour in the vegetable broth and milk, whisking continuously. Bring the mixture to a simmer and cook until thickened.

Stir in the grated cheddar cheese until melted and smooth.

In a large mixing bowl, combine the roasted squash, sautéed onion mixture, and chopped fresh parsley (if using).

Transfer the mixture to a 9x13 inch baking dish and top with breadcrumbs.
