Jamaican Coconut Curry Chicken

- β2 tbsp coconut oil
- β1 medium onion
- β2 tsp curry powder
- β1 tsp allspice
- β1 tsp ginger
- β1 can coconut milk
- βto taste salt
- βto taste black pepper
- βchopped (optional) fresh cilantro

Preheat oven to 400Β°F (200Β°C).

Season the chicken breast with salt and black pepper.

Heat the coconut oil in a large oven-safe skillet over medium heat.

Add the onion and cook until softened, about 5 minutes.
