Jamaican Pork Roast Casserole

Ingredients

- β1 medium onionchopped
- β1 medium bell pepperchopped
- β2 tablespoons Jamaican jerk seasoning
- β2 tablespoons olive oil
- β2 sprigs chopped fresh thyme
- β1 can (14.5 oz) canned diced tomatoes
- β1 cup brown rice
- β1 cup shredded cheddar cheese

Preheat oven to 375Β°F (190Β°C).

Season the pork roast with salt, pepper, and Jamaican jerk seasoning.

Heat olive oil in a large skillet over medium-high heat. Sear the pork roast until browned on all sides.

Transfer the pork roast to a large casserole dish. Add chopped onion and bell pepper to the skillet and cook until tender.
