Mackerel Jjigae Bento
A Japanese-inspired take on the Korean classic, featuring mackerel and a variety of vegetables. Perfect for a quick and easy bento box.
Ingredients
- β2 Mackerel filletsFresh or frozen
- β1 cup Sushi riceCooked
- β1 medium ZucchiniSliced
- β1 medium CarrotsSliced
- β1/4 cup Green onionsChopped
- β2 tbsp GochujangKorean chili paste
- β1 tsp Soy sauceLow-sodium
- β1 tsp Rice vinegarOptional

Preheat the oven to 400Β°F (200Β°C).

Line a baking sheet with parchment paper and place the mackerel fillets on it.

Drizzle with a little bit of oil and season with salt and pepper. Bake for 12-15 minutes, or until cooked through.

While the mackerel is baking, heat a small amount of oil in a pan over medium heat.

Add the sliced zucchini and carrots and cook until tender, about 5 minutes.

Stir in the gochujang and soy sauce, and cook for an additional minute.

To assemble the bento box, place a scoop of sushi rice on the bottom, followed by a piece of mackerel, some of the vegetable mixture, and finally a sprinkle of green onions.
