Malaysian Chicken Satay
A classic Southeast Asian dish of marinated chicken grilled to perfection and served with peanut sauce.

- β1 pound Boneless, skinless chicken breastCut into skewer-sized pieces
- β1/2 cup Coconut milkFor marinating
- β2 tablespoons Lime juiceFor marinating
- β2 cloves GarlicMince for marinade
- β1 tablespoon GingerGrate for marinade
- β1/4 cup Peanut oilFor grilling
- β1/2 cup PeanutsChopped for peanut sauce

1. Preheat oven to 400Β°F (200Β°C).

2. In a blender or food processor, combine coconut milk, lime juice, garlic, and ginger. Blend until smooth.

3. In a large bowl, whisk together blended marinade, soy sauce, and honey. Add chicken and mix to coat. Cover and refrigerate for at least 2 hours or overnight.

4. Thread marinated chicken onto skewers, leaving a small space between each piece.

5. Brush the grill or oven rack with peanut oil. Grill or bake the satay for 10-12 minutes, or until cooked through.

6. Meanwhile, prepare peanut sauce by blending peanuts, peanut butter, soy sauce, and honey until smooth.
