Beef Birria Tacos
A traditional Mexican dish of slow-cooked beef in a rich, spicy broth, served with tortillas, onion, and lime.
Ingredients
- β2 lbs beef brisketcut into large pieces
- β1 large onionchopped
- β3 cloves garlicminced
- β2 tbsp chili powder
- β1 tsp cumin
- β2 tbsp tomato paste
- β2 chipotle peppers in adobo sauce
- β4 cups beef broth
- β2 cups roasted tomatoes
- β1/4 cup fresh cilantrochopped

Preheat the oven to 300Β°F (150Β°C).

In a large Dutch oven, heat 2 tablespoons of oil over medium-high heat.

Add the beef and cook until browned on all sides, about 5 minutes.

Add the onion and garlic and cook until the onion is translucent, about 5 minutes.

Add the chili powder, cumin, and chipotle peppers and cook for 1 minute.

Add the beef broth, tomato paste, and roasted tomatoes. Bring to a boil, then cover and transfer to the oven.

Braise the birria for 2 1/2 hours, or until the beef is tender.

Shred the beef with two forks and season with salt and pepper.

Warm tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble the tacos by spooning the birria onto a tortilla and topping with onion, cilantro, and a squeeze of lime juice.
