Tagine Stuffed Courgette
A flavorful and aromatic dish from North Africa, made with roasted courgette and a blend of spices.
Ingredients

- β1 tsp tagine spice blendavailable at most spice shops
- β2 tbsp olive oilfor roasting
- β1 onionmedium-sized
- β2 cloves garlicminced
- β1 can chopped tomatoes14.5 oz
- β1 cup quinoauncooked
- β1/4 cup chopped fresh cilantrooptional

Preheat the oven to 375Β°F (190Β°C).

Cut the courgette in half lengthwise and scoop out the seeds.

In a bowl, mix together the tagine spice blend, olive oil, onion, garlic, and chopped tomatoes.

Stuff each courgette half with the spice mixture, dividing it evenly.

Place the stuffed courgette on a baking sheet lined with parchment paper.

Roast in the preheated oven for 25-30 minutes, or until the courgette is tender.

While the courgette is roasting, cook the quinoa according to package instructions.

Fluff the cooked quinoa with a fork and stir in chopped cilantro, if using.
