Preheat the oven broiler.

In a large bowl, whisk together the Thai Red Curry Paste, Coconut Oil, Thai Fish Sauce, and Brown Sugar.

Add the lamb pieces to the marinade and mix well to coat.

Thread the lamb pieces onto skewers, leaving a little space between each piece.

Place the skewers on the oven broiler pan and grill for 10-12 minutes, turning occasionally, or until the lamb is cooked to your desired level of doneness.
