Peruvian Roasted Chicken Skewers
A flavorful and moist Peruvian-inspired roasted chicken dish, marinated in a zesty mixture of aji amarillo peppers, garlic, and cumin, served on skewers.
Ingredients
- β1 1/2 pounds chicken breastcut into 1-inch pieces
- β3 aji amarillo pepperminced
- β3 cloves garlicminced
- β1 teaspoon cuminground
- β1 teaspoon corianderground
- β2 tablespoons lime juicefreshly squeezed
- β1/4 cup olive oilfor brushing
- βto taste salt
- βto taste black pepper
- β1/4 cup fresh cilantrochopped

Preheat the oven to 400Β°F (200Β°C).

In a blender or food processor, combine aji amarillo pepper, garlic, cumin, coriander, lime juice, salt, and black pepper.

Add the chicken to the marinade and mix well to coat. Let it marinate for at least 30 minutes.

Thread the marinated chicken onto the skewers, leaving a little space between each piece.

Brush the skewers with olive oil and season with salt and black pepper.

Place the skewers on a baking sheet lined with parchment paper and roast in the preheated oven for 25-30 minutes, or until cooked through.
