Portuguese Roasted Chicken
A classic Portuguese dish, this roasted chicken is flavorful and moist. Perfect for a family dinner.
Ingredients
- ●1 (3-4 pound) whole chicken chickenmake sure it's patted dry
- ●2 tablespoons olive oilfor rubbing the chicken
- ●2 cloves garlicminced
- ●1 teaspoon saltfor seasoning
- ●1/2 teaspoon black pepperfor seasoning
- ●1 tablespoon rosemarychopped (optional)

Preheat the oven to 425°F (220°C).

Rinse the chicken and pat it dry with paper towels.

Rub the chicken with olive oil, making sure to get some under the skin as well.

Season with salt, black pepper, and minced garlic.

If using rosemary, sprinkle it over the chicken.

Place the chicken in a roasting pan and put it in the oven.

Roast the chicken for 45-50 minutes, or until the internal temperature reaches 165°F (74°C).

Baste the chicken with pan juices every 20 minutes to keep it moist.
