Sicilian Eggplant Ragu
A Sicilian-inspired eggplant ragu recipe roasted to perfection.
Ingredients
- β2 medium Eggplant
- β1 cup Ragu
- β2 tablespoons Olive Oilfor roasting
- βto taste Salt
- βto taste Black Pepper
- β3 cloves Garlic
- β1/4 cup Fresh Basilchopped

Preheat oven to 400Β°F (200Β°C).

Cut the eggplant into 1/2-inch thick slices.

Brush both sides of the eggplant slices with olive oil and season with salt and black pepper.

Place the eggplant slices on a baking sheet and roast for 20-25 minutes, or until tender.

While the eggplant is roasting, heat the ragu in a saucepan over medium heat.

When the eggplant is done, add it to the saucepan with the ragu and stir to combine.

Add the chopped garlic and cook for 1-2 minutes, or until fragrant.

Stir in the chopped fresh basil.
