Smoky Birria Tacos
A fusion of traditional Mexican flavors with smoky, rich birria and the added freshness of ikura. Serve in tacos with a side of roasted vegetables.
Ingredients

- ●1 large roasted oniondiced
- ●3 cloves roasted garlicminced
- ●2 smoky chipotle peppersdiced
- ●1 can tomato sauce14.5 oz
- ●1 tsp cuminground
- ●1 tsp chili powder
- ●8-10 corn tortillascorn tortillas for tacos
- ●1/4 cup fresh cilantrochopped

Preheat oven to 400°F (200°C).

In a large pan, sauté the roasted onion and garlic until softened.

Add the smoky chipotle peppers and cook for 1 minute.

Stir in the cumin and chili powder, cooking for 1 minute.

Add the tomato sauce and bring to a simmer.

Reduce heat to low and let cook for 10 minutes.

Meanwhile, prepare the roasted vegetables by tossing with olive oil, salt, and pepper, and roasting in the oven for 20 minutes.

Warm the corn tortillas by wrapping in a damp paper towel and microwaving for 20-30 seconds.

Assemble the tacos by spooning the birria mixture onto a tortilla and topping with ikura, cilantro, and roasted vegetables.
