Southern-Style Roasted Chicken
A classic Southern dish featuring roasted chicken, rice, and a hint of Thai spices. This recipe is perfect for a comforting dinner.
Ingredients

- ●6 slices guanciale
- ●2 cups cooked rice
- ●1 large onion
- ●3 cloves garlic
- ●2 tbsp thai red curry paste
- ●1 cup chicken broth
- ●2 tbsp olive oil
- ●1 tsp salt
- ●1 tsp black pepper

Preheat the oven to 425°F (220°C).

Rinse the chicken breast and pat it dry with paper towels.

Season the chicken with salt and black pepper.

Heat olive oil in a large skillet over medium-high heat.

Sear the chicken breast until browned on both sides, about 5 minutes per side.
