Venezuelan Oven Roasted Chicken Kebabs
A delicious and spicy Venezuelan-inspired dish that combines the flavors of roasted chicken with the convenience of oven-baked chicken kebabs.
Ingredients
- ●1 pound Boneless, skinless chicken breastcut into 1-inch cubes
- ●1 medium Red onioncut into 1-inch pieces
- ●1 medium Red bell peppercut into 1-inch pieces
- ●1 pint Cherry tomatoeshalved
- ●3 cloves Garlicminced
- ●2 tablespoons Spicy Venezuelan hot saucesuch as ají amarillo
- ●2 tablespoons Olive oilfor brushing skewers
- ●to taste Salt and pepper

Preheat oven to 400°F (200°C).

In a large bowl, whisk together hot sauce, garlic, salt, and pepper.

Add the chicken, onion, bell pepper, and cherry tomatoes to the bowl and toss to coat with the hot sauce mixture.

Thread the chicken and vegetables onto skewers, leaving a small space between each piece.

Brush the skewers with olive oil and season with salt and pepper.

Place the skewers on a baking sheet lined with parchment paper and roast in the preheated oven for 20-25 minutes, or until the chicken is cooked through.
