Syrian-Style Roasted Bulgur Pilaf
A flavorful and nutritious Syrian-inspired pilaf made with roasted bulgur and a blend of spices.
Ingredients
- β1 cup bulgurpreferably day-old
- β2 tablespoons olive oilfor roasting
- β1 medium onionchopped
- β2 cloves garlicminced
- β1 teaspoon cuminground
- β1/2 teaspoon paprikaground
- β1/2 teaspoon saltto taste
- β1/4 teaspoon black pepperto taste
- β1/4 cup chopped fresh parsleyoptional

Preheat the oven to 400Β°F (200Β°C).

Toss the bulgur with 1 tablespoon of olive oil, onion, garlic, cumin, paprika, salt, and black pepper on a baking sheet.

Roast in the preheated oven for 20-25 minutes, or until the bulgur is lightly toasted and fragrant.

Fluff the roasted bulgur with a fork and stir in the remaining 1 tablespoon of olive oil.

Transfer the bulgur mixture to a medium saucepan and add 2 cups of water.

Bring to a boil over high heat, then reduce the heat to low and cover.
