Slovakian Roasted Cucumber Fritters
Crispy fritters filled with roasted cucumber and perfect for a light summer meal. This dish is a unique Slovakian twist on traditional fritters.
Ingredients
- β1 medium Cucumberseeded and sliced
- β2 tablespoons Olive oilfor roasting
- β1 cup All-purpose flourfor coating
- β1/2 cup Breadcrumbsfor coating
- β1 Eggbeaten
- β1/4 teaspoon Garlic powderto taste
- β1/4 teaspoon Saltto taste
- βchopped Fresh parsleyfor garnish

Preheat the oven to 400Β°F (200Β°C).

Place the sliced cucumber on a baking sheet lined with parchment paper, drizzle with olive oil, and roast for 20-25 minutes or until tender.

In a shallow dish, mix together flour, breadcrumbs, egg, garlic powder, and salt.

Once the cucumber is done, let it cool slightly, then chop it into small pieces.

Add the chopped cucumber to the flour mixture and stir to combine.

Using your hands, shape the mixture into small patties.

Heat about 1/2 inch (1 cm) of oil in a non-stick pan over medium-high heat.

When the oil is hot, add a few patties to the pan (do not overcrowd).

Fry for 2-3 minutes on each side or until golden brown.

Using a slotted spoon, transfer the fritters to a paper towel-lined plate to drain excess oil.
