Thai Roasted Tofu Bowl
A delicious and easy-to-make Thai-inspired dish made with roasted tofu, served in a bowl with your choice of toppings.
Ingredients
- β1 block firm tofucut into 1-inch cubes
- β2 tbsp coconut oilfor roasting
- β2 tbsp Thai red curry pastefor marinade
- β2 tbsp maple syrupfor marinade
- β1 tsp brown sugarfor marinade
- β1 tsp garlic powderfor marinade
- β2 tbsp rice vinegarfor marinade
- β2 bell peppersany color, sliced
- β1 onionsthinly sliced
- β1 cucumberthinly sliced
- β1/4 cup chopped cilantrofor garnish

Preheat the oven to 400Β°F (200Β°C).

In a small bowl, whisk together curry paste, maple syrup, brown sugar, garlic powder, and rice vinegar.

Add the tofu to the marinade and toss to coat. Let it sit for at least 15 minutes.

Line a baking sheet with parchment paper and arrange the tofu in a single layer.

Drizzle the coconut oil over the tofu and toss to coat.

Roast the tofu in the preheated oven for 20-25 minutes, or until golden brown and crispy.

While the tofu is roasting, heat a tablespoon of coconut oil in a large skillet over medium-high heat.

Add the sliced bell peppers and onions to the skillet and cook for 5-7 minutes, or until they start to soften.

Add the sliced cucumber to the skillet and cook for an additional 2-3 minutes, or until the vegetables are tender.

To assemble the bowls, place a scoop of the roasted tofu on the bottom, followed by a spoonful of the vegetable mixture.

Garnish with chopped cilantro and serve immediately.
