Adana Lamb Kebap
A classic Turkish dish of lamb minced and mixed with spices, then grilled on skewers. Serve with roasted vegetables and pita bread.
Ingredients
- β500g Lamb minceUse 80/20 or 70/30 lean to fat ratio
- β1 medium OnionFinely chopped
- β2 cloves GarlicMinced
- β1 small Red pepperFinely chopped
- β1 tsp SaltUse kosher or sea salt
- β1/2 tsp Black pepperFreshly ground
- β1 tsp PaprikaSweet or hot, whichever suits your taste
- β2 tbsp Olive oilFor brushing skewers

1. Preheat the oven to 200Β°C (400Β°F).

2. In a large bowl, combine lamb mince, chopped onion, minced garlic, red pepper, salt, black pepper, and paprika.

3. Mix everything together with your hands or a wooden spoon until just combined.

4. Soak 8-10 bamboo skewers in water for at least 30 minutes.

5. Thread the lamb mixture onto the skewers, leaving a small space between each piece.

6. Brush the skewers with olive oil and season with salt.

7. Grill the skewers over medium-high heat for 2-3 minutes per side, or until cooked to your liking.

8. Serve hot with roasted vegetables and pita bread.

9. Roast the vegetables in the oven for 15-20 minutes, or until tender.

10. Slice the pita bread in half and toast in the oven for a few minutes.
