Ukrainian Barley Pilaf
A hearty and flavorful side dish originating from Ukraine, made with roasted barley and a blend of spices.
Ingredients

- β2 tablespoons Olive Oil
- β1 medium Onionchopped
- β2 cloves Garlicminced
- β2 cups Chicken Broth
- β1 teaspoon Dried Thyme
- β1 teaspoon Salt
- β1/2 teaspoon Black Pepper

Preheat the oven to 375Β°F (190Β°C).

In a large oven-safe pot, heat the olive oil over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional minute.

Add the barley and stir to coat with the oil and mix with the onion and garlic.

Add the chicken broth, thyme, salt, and pepper. Stir to combine.

Cover the pot with a lid and transfer it to the preheated oven.

Roast the barley pilaf for 30-40 minutes, or until the liquid has been absorbed and the barley is tender.
