Welsh Red Potato Gratin
A Mexican-inspired twist on the classic Welsh potato dish, topped with a layer of roasted red potatoes and a sprinkle of cheese.
Ingredients
- β2 large Welsh potatoesthick-skinned
- β1 large Red potatoesthin-skinned
- β1 medium Red onionthinly slice
- β3 cloves Garlicminced
- β1/4 cup Cilantrochopped
- β1 cup Cheddar cheeseshredded
- β2 tbsp Olive oil
- βto taste Salt
- βto taste Pepper
Instructions

Preheat oven to 400Β°F (200Β°C).

Thinly slice the red onion and mince the garlic.

Layer the thinly sliced red onion and minced garlic at the bottom of a 9x13 inch baking dish.

Thinly slice the Welsh potatoes and layer them on top of the onion mixture.

Thinly slice the red potatoes and layer them on top of the Welsh potatoes.

Drizzle the olive oil over the top layer of potatoes.

Season with salt and pepper to taste.

Sprinkle the chopped cilantro and shredded cheddar cheese over the top layer of potatoes.

Cover the dish with aluminum foil and bake for 30 minutes.

Remove the foil and continue baking for an additional 15-20 minutes, or until the top is golden brown.
