Egyptian Lentil Stew
A hearty and flavorful stew made with lentils, perfect for a chilly evening. This recipe is inspired by traditional Egyptian cuisine.

- β1 medium onionchopped
- β3 cloves garlicminced
- β2 medium carrotpeeled and chopped
- β2 medium tomatochopped
- β1 tsp cuminground
- β1 tsp corianderground
- β1 tsp paprikaground

Preheat the oven to 180Β°C (350Β°F).

Heat some oil in a large pot over medium heat. Add the onion and cook until softened, about 5 minutes.

Add the garlic, carrot, and tomato to the pot. Cook for another 5 minutes, stirring occasionally.

Add the lentil, cumin, coriander, and paprika to the pot. Stir well to combine.

Add enough water to the pot to cover the lentil mixture. Bring to a boil, then reduce the heat to low and simmer for 20 minutes.

Transfer the pot to the preheated oven and bake for 30 minutes.

Remove the pot from the oven and season the stew with salt and pepper to taste.
