Thai Irish Stew

- β1 pound Irish lamb stew meatCut into 1-inch cubes
- β2 tablespoons Thai red curry pasteHomemade or store-bought
- β1 can Monsoon-sourced coconut milk14 oz
- β2 medium Oven-roasted potatoesDiced
- β1 medium OnionChopped
- β3 cloves GarlicMinced
- β1 tablespoon Fish sauceOptional
- β1 tablespoon Brown sugar

Preheat the oven to 300Β°F (150Β°C).

In a large Dutch oven, heat 2 tablespoons of oil over medium heat.

Add the lamb and cook until browned on all sides, about 5 minutes.

Add the curry paste and cook for 1 minute, stirring constantly.

Add the coconut milk, potatoes, onion, and garlic. Stir to combine.
