Traditional Algerian Mutton Tagine
A classic North African dish made with tender mutton and a blend of aromatic spices. This tagine is slow-cooked to perfection, resulting in a rich and flavorful stew.
Ingredients
- β1.5 pounds mutton shoulder
- β2 tablespoons overpowering harissa
- β1 teaspoon algerian cumin
- β1 teaspoon coriander
- β1-inch piece ginger
- β2 tablespoons olive oil
- β1 large onion
- β3 cloves garlic
- β1 cup chicken broth
- β1/4 cup algerian olives

Heat oil in a large Dutch oven over medium heat.
