Thai Lentil Stew
A hearty and flavorful Thai-inspired stew made with red lentils, onions, and a blend of aromatic spices. Serve over steamed rice or noodles for a satisfying meal.
Ingredients
- β1 cup red lentilsrinsed and drained
- β1 medium onionchopped
- β2 tablespoons paddedtoasted in a pan
- β1 tablespoon syriantoasted in a pan
- β4 cups stewvegetable broth
- β1 can coconut milkfull-fat
- β1 teaspoon fish sauceoptional
- β1 teaspoon brown sugaroptional
- β1 teaspoon ground cumintoasted in a pan
- β1 teaspoon ground coriandertoasted in a pan
Instructions

Heat 2 tablespoons of oil in a large pan over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the padded and syrian and cook for 1 minute.

Add the cumin and coriander and cook for 1 minute.

Add the stew and bring to a boil.

Reduce the heat to low and simmer for 20 minutes.

Add the coconut milk and stir to combine.

Add the fish sauce and brown sugar (if using) and stir to combine.
