Spanish Paella
A classic Spanish dish made with saffron-infused rice, succulent seafood, and smoky chorizo.
Ingredients
- β1 pound Chorizo
- β1 pound Shrimp
- β1 pound Mussels
- β1/2 teaspoon Saffron
- β1 cup Rice
- β1 medium Tomato
- β1 medium Onion
- β2 cloves Garlic
- β2 tablespoons Olive oil
- β1 teaspoon Smoked paprika

Heat the olive oil in a large paella pan over medium-high heat.

Add the chorizo and cook until browned, about 2-3 minutes.

Add the onion and cook until softened, about 3-4 minutes.

Add the garlic and cook for 1 minute.

Add the tomato and cook for 2 minutes.

Add the rice and stir to coat with the oil and mix with the vegetables.

Add the saffron, smoked paprika, and 2 cups of water.

Bring to a boil, then reduce the heat to low and simmer, covered, for 20-25 minutes.

Add the mussels and shrimp and cook until the seafood is cooked through.
