Panang Brise Chicken Thighs
A keto-friendly twist on Thai Panang Chicken with the addition of tenderized Brise chicken.
Ingredients
- β4 Brise chicken thighsPounded thin
- β2 tablespoons Panang curry pasteHomemade or store-bought
- β2 tablespoons Coconut oilFor cooking
- β1 tablespoon Fish sauceOptional, for flavor
- β1 tablespoon Keto sweetenerSuch as Swerve or Erythritol
- β1/4 cup Fresh basilChopped
- β1/4 cup Fresh mintChopped
- β1 cup Keto-friendly vegetablesSuch as bell peppers, cauliflower, or mushrooms
Instructions

Heat 1 tablespoon of coconut oil in a pan over medium-high heat.

Add the Brise chicken thighs and cook until browned, about 5 minutes.

Remove the chicken from the pan and set aside.

Add the remaining 1 tablespoon of coconut oil to the pan.

Add the Panang curry paste and cook for 1 minute, stirring constantly.

Add the keto-friendly vegetables and cook until tender, about 3-4 minutes.

Return the chicken to the pan and stir to combine with the curry paste and vegetables.

Cook for an additional 2-3 minutes, until the chicken is cooked through.

Stir in the fish sauce and keto sweetener (if using).
