Peppermint Saute
A refreshing and easy-to-make saute dish perfect for a quick snack.
Ingredients
- β1/4 cup fresh leaves Peppermint
- β2 tablespoons Butter
- β1 tablespoon Sugar
- β1/4 teaspoon Vanilla extract
- β1/2 cup Heavy cream
- β2 large Eggs
- βpinch Salt
Instructions

In a medium saucepan, melt the butter over medium heat.

Add the sugar and cook for 1-2 minutes, stirring constantly.

Add the peppermint leaves and cook for 1-2 minutes, until they start to wilt.

In a separate bowl, whisk the heavy cream and vanilla extract.

Pour the cream mixture over the peppermint mixture and stir to combine.

In a separate bowl, whisk the eggs and a pinch of salt.

Temper the eggs by slowly pouring the warm peppermint mixture into the eggs, whisking constantly.

Return the mixture to the saucepan and cook over low heat, stirring constantly, until the mixture thickens.

Serve warm, garnished with additional peppermint leaves if desired.
