Irish Braise Stew
A hearty and comforting Irish stew made with tender beef and flavorful root vegetables, all in a rich and peppery broth.
Ingredients
- β1 pound beefcut into 1-inch cubes
- β2 medium carrotspeeled and chopped
- β2 medium potatoespeeled and chopped
- β1 medium onionchopped
- β1 tablespoon peppercornswhole
- β1 cup mushroomssliced
- β2 cups beef brothgluten-free
- β1 cup milkdairy or non-dairy, gluten-free
- β2 tablespoons flourgluten-free

Heat 2 tablespoons of oil in a large Dutch oven over medium-high heat.

Add the beef and cook until browned, about 5 minutes. Remove from heat and set aside.

Add the chopped onion to the pot and cook until softened, about 3-4 minutes.

Add the chopped carrots and potatoes to the pot and cook for an additional 5 minutes.

Add the sliced mushrooms to the pot and cook until they release their liquid and start to brown, about 5 minutes.

Add the browned beef back to the pot, along with the beef broth, peppercorns, and milk.

Bring the mixture to a boil, then cover the pot and transfer it to the oven.

Braise the stew in the oven for 2-3 hours, or until the beef is tender and the vegetables are cooked through.

Remove the pot from the oven and stir in the gluten-free flour to thicken the stew.
