Slovakian Vegetable Stew
A hearty, flavorful stew made with a variety of vegetables and a hint of Slovakian spices. Perfect for a cold winter's night.
Ingredients
- β2 large Carrotspeeled and chopped
- β3 medium Potatoespeeled and cubed
- β2 medium Onionschopped
- β2 tbsp Pepperyground
- β2 cups Densemushrooms, sliced
- β1 can Stewdiced tomatoes, 14 oz
- β1 tsp Curryground
Instructions

Heat 2 tbsp of oil in a large pot over medium heat.

Add the chopped onions and cook until softened, about 5 minutes.

Add the sliced mushrooms and cook until they release their liquid and start to brown, about 5 minutes.

Add the chopped carrots and potatoes, stir to combine.

Add the diced tomatoes, ground peppery, ground curry, and enough water to cover the vegetables.

Bring to a boil, then reduce the heat to low and simmer for 20-25 minutes, or until the vegetables are tender.

Season with salt and pepper to taste.
