Coconut Crumble French Toast
A twist on the classic French toast, infused with coconut flavor and topped with a crunchy crumble.
Ingredients
- β1 loaf 4 slices of French bread
- β1 cup 1 cup of coconut milk
- β2 eggs 2 large eggs
- β1 cup 1/4 cup of unsweetened shredded coconut
- β1 cup 1/4 cup of granulated sugar
- β2 tbsp 2 tbsp of unsalted butter, melted
- β1 cup Coconut crumble topping (recipe below)

1. In a shallow dish, whisk together coconut milk, eggs, and sugar until well combined.

2. Heat a non-stick skillet or griddle over medium heat.

3. Dip each slice of French bread into the coconut milk mixture, coating both sides evenly.

4. Place the coated bread slices on the skillet or griddle.

5. Cook for 2-3 minutes or until golden brown, flip and cook for another 2-3 minutes or until golden brown.

6. Repeat with the remaining bread slices.

7. While the French toast is cooking, prepare the coconut crumble topping.

8. To assemble the dish, place 2 slices of French toast on a plate, top with a dollop of whipped cream or coconut whipped cream, and sprinkle with coconut crumble topping.

10. Garnish with additional shredded coconut and a sprinkle of granulated sugar, if desired.
