Jamaican Chicken Stew
A hearty and flavorful stew made with chicken, jamaican spices, and a kick of peppery heat.
Ingredients
- β1.5 lbs boneless, skinless chicken breast
- β2 tsp jamaican spice blend
- β1 tsp peppercorns
- β1 large onionchopped
- β3 cloves garlicminced
- β1 can diced tomatoes
- β1 cup stew meat
- β2 cups chicken broth

Heat oil in a large Dutch oven over medium-high heat.

Add the chicken and cook until browned on all sides, about 5-7 minutes.

Remove the chicken from the pot and set aside.

Add the onion and garlic to the pot and cook until the onion is translucent, about 5 minutes.

Add the jamaican spice blend and peppercorns to the pot and cook for 1 minute.

Add the diced tomatoes, stew meat, and chicken broth to the pot.

Return the chicken to the pot and bring the mixture to a boil.

Reduce the heat to low and simmer, covered, for 20-25 minutes, or until the chicken is cooked through.

Season the stew with salt and pepper to taste.
