Russian Carrot Soup
A hearty and comforting soup made with carrots and a hint of Russian spices. Serve with a swirl of sour cream for added richness.
Ingredients

- β1 tsp peppery
- β1 tsp russian
- β1 can souplow sodium

Heat 2 tablespoons of oil in a large pot over medium heat.

Add the carrots and cook until tender, about 5 minutes.

Add the peppery and russian spices and cook for 1 minute.

Pour in the soup and bring to a boil.

Reduce the heat to low and simmer for 10 minutes.

Use an immersion blender to puree the soup until smooth.

Return the pot to medium heat and add 1 cup of heavy cream.
