Ukrainian Peppery Oat Hash
A hearty, savory dish that combines the flavors of Ukraine with a peppery kick. Perfect for a cold morning.
Ingredients
- β2 large peppery potatoesthinly sliced
- β1 lb ukrainian sausagesuch as kovbasa
- β1/2 cup rolled oatsquick-cooking
- β1 cup hash brownsstore-bought or homemade
- β1 medium onionchopped
- β3 cloves garlicminced
- βto taste salt
- βto taste black pepper
- β2 tbsp butterunsalted

Preheat oven to 400Β°F (200Β°C).

In a large bowl, combine sliced potatoes and chopped onion. Drizzle with 1 tbsp butter and toss to coat.

Spread potatoes on a baking sheet and roast for 20-25 minutes, or until tender and golden brown.

While potatoes are roasting, cook Ukrainian sausage in a large skillet over medium-high heat, breaking up with a spoon as it cooks.

Add minced garlic to the skillet and cook for 1 minute.

Stir in hash browns and cook until heated through.

In a separate bowl, mix together oats and a pinch of salt.

Add cooked sausage mixture to the bowl with oats and stir to combine.

To assemble the dish, place a scoop of roasted potatoes on a plate, top with a spoonful of sausage and oat mixture, and garnish with chopped fresh herbs (if desired).
