Spanish-Style Paella with Crisp Chorizo
A traditional Spanish paella dish made with crispy chorizo and perfectly cooked rice. Perfect for a hearty dinner.
Ingredients
- β1 pound, sliced Spanish chorizo
- β1 pound, sliced Andouille sausage
- β1 cup Paella rice
- β2 medium, diced Tomato
- β1 medium, diced Red bell pepper
- β1 medium, diced Onion
- β1 pound, peeled and deveined Gambas
- β2 cups Shrimp broth
- β2 tablespoons Olive oil
- β1 teaspoon Smoked paprika
- β1 teaspoon Salt
- β1/2 teaspoon Black pepper

Heat the olive oil in a large paella pan or skillet over medium-high heat.

Add the sliced chorizo and cook until crispy, about 5 minutes. Remove from the pan and set aside.

Add the sliced Andouille sausage to the pan and cook until browned, about 5 minutes. Remove from the pan and set aside with the chorizo.

Add the diced onion, red bell pepper, and tomato to the pan. Cook until the vegetables are tender, about 5 minutes.

Add the paella rice to the pan and cook for 1-2 minutes, stirring constantly.

Add the shrimp broth, smoked paprika, salt, and black pepper to the pan. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 20-25 minutes, or until the rice is cooked and the liquid has been absorbed.

Add the cooked chorizo and sausage back to the pan and stir to combine.

Add the peeled and deveined gambas to the pan and cook for an additional 2-3 minutes, or until they are pink and cooked through.
