Kenyan Sweet Potato Stew
A hearty and flavorful stew made with perfectly cooked sweet potatoes, smoked meat, and Kenyan spices.
Ingredients
- β3 large Sweet Potatoes
- β1 pound Smoked Meat (beef or pork)sliced into bite-sized pieces
- β2 tablespoons Olive Oil
- β1 medium Onionschopped
- β3 cloves Garlicminced
- β2 inches Gingergrated
- β1 teaspoon Curry Powder
- β1 teaspoon Cumin
- β1 teaspoon Salt
- β1/2 teaspoon Black Pepper

Heat the olive oil in a large pot over medium-high heat.

Add the sliced smoked meat and cook until browned, about 5 minutes.

Add the chopped onions and cook until softened, about 5 minutes.

Add the minced garlic and grated ginger and cook for 1 minute.

Add the curry powder, cumin, salt, and black pepper, and stir to combine.

Add the chopped sweet potatoes and stir to combine.

Add 2 cups of water to the pot and bring to a boil.
