Peruvian Beef Stir Fry: Saltado
A classic Peruvian stir-fry dish made with beef, onions, tomatoes, and French fries, served with rice.
Ingredients
- β1 pound beef strips (sirloin or ribeye)
- β2 tablespoons vegetable oil
- β1 large onion
- β2 medium tomato
- β1 cup French fries
- β2 tablespoons soy sauceoptional
- β1 small aji amarillo pepperoptional
- βto taste salt
- βto taste black pepper
Instructions

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the beef strips and cook until browned, about 3-4 minutes. Remove from the skillet and set aside.

Add the remaining 1 tablespoon of vegetable oil to the skillet.

Add the sliced onion and cook until translucent, about 3-4 minutes.

Add the diced tomato and cook for an additional 2 minutes.

Add the French fries and cook until they start to brown, about 2-3 minutes.

Add the cooked beef back into the skillet and stir to combine with the vegetables and French fries.

Add the soy sauce and aji amarillo pepper (if using) to the skillet and stir to combine.

Season with salt and black pepper to taste.

Serve the Peruvian beef stir-fry over rice and enjoy!
