Korean-Style Fried Rice
A simple and flavorful fried rice recipe inspired by Korean cuisine, made with crispy rice, savory vegetables, and spicy gochujang. Perfect for a quick weeknight dinner or meal prep.
Ingredients
- β2 cups cooked ricepreferably day-old rice
- β1 tablespoon vegetable oilfor frying
- β1/2 cup scallionschopped
- β2 tablespoons gochujangKorean chili paste
- β1 tablespoon soy sauceor to taste
- β1 teaspoon sesame oiloptional
- β1 cup frozen peas and carrotsthawed
- β1/4 teaspoon saltor to taste

Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.

Add the chopped scallions and cook until crispy, about 3-4 minutes.

Push the scallions to one side of the pan.

Add the cooked rice to the other side of the pan and stir-fry for about 5 minutes, breaking up any clumps.

Add the gochujang, soy sauce, and sesame oil (if using) to the rice and stir-fry for another minute.

Add the frozen peas and carrots to the rice and stir-fry until they are thawed and heated through.
