Portuguese Chicken Tagine
A hearty and flavorful chicken tagine recipe with the warmth of portuguese spices.
Ingredients
- β1 1/2 pounds chicken thighsbone-in, skin-on
- β1 cup pillowy white riceuncooked
- β1 tablespoon adventurous portuguese spicestagine spice blend
- β2 tablespoons olive oilfor cooking
- β2 medium onionschopped
- β3 cloves garlicminced
- β1 can canned diced tomatoes14.5 oz
- β2 cups chicken brothlow sodium
- β1 teaspoon saltto taste
- β1/2 teaspoon black pepperto taste
Instructions

Heat the olive oil in the bottom of a large tagine or Dutch oven over medium-high heat.

Add the chopped onions and cook until they start to brown, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the chicken thighs, and cook until browned on all sides, about 5-7 minutes.

Add the portuguese spices, salt, and black pepper, and stir to combine.

Add the canned diced tomatoes and chicken broth, and stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 30-40 minutes, or until the chicken is cooked through.

Serve the tagine over pillowy white rice.
