Moroccan Lentil Soup
A hearty and flavorful soup made with lentils, onions, and spices, inspired by Moroccan cuisine.
Ingredients
- β1 cup, rinsed and drained lentils
- β2 cups, torn into small pieces pillowy bread
- β1 medium, chopped onion
- β2 tablespoons fermented olive oil
- β1 tablespoon moroccan spices
- β4 cups water
- βto taste salt
- β2 tablespoons (optional) bissara
Instructions

Heat the fermented olive oil in a large pot over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the Moroccan spices and cook for 1 minute, stirring constantly.

Add the lentils, torn bread, water, and salt. Bring to a boil, then reduce the heat and simmer for 20 minutes.

Use an immersion blender to puree the soup until smooth.

Taste and adjust the seasoning as needed.

If using bissara, stir it in just before serving.

Serve hot, garnished with additional Moroccan spices if desired.
