Baked Cod with Vietnamese Bao and Dipping Sauce
A fusion dish combining the delicate flavors of Vietnam with the comfort of a soft bao. Pair the crispy cod with a sweet and spicy dipping sauce.
Ingredients
- β4 cod filletfresh and sustainable
- β4 vietnamese baohomemade or store-bought
- β1 pillowy bunfor serving
- β2 tbsp veggie oilfor frying
- β2 tbsp lime juicefreshly squeezed
- β1 tsp fish sauceoptional
- β1/2 cup green onionschopped
- β1 tsp srirachaoptional
- β salt and pepperto taste

Preheat oven to 400Β°F (200Β°C). Line a baking sheet with parchment paper.

Rinse the cod fillet and pat dry with paper towels.

Season the cod with salt and pepper.

Place the cod on the prepared baking sheet and bake for 12-15 minutes or until cooked through.

While the cod is baking, heat the veggie oil in a pan over medium heat.

Add the green onions and cook for 1-2 minutes or until slightly softened.

Add the lime juice and fish sauce (if using) and stir to combine.

Serve the cod on top of the Vietnamese bao, garnished with the dipping sauce and a sprinkle of sriracha (if using).
