Lamb Tagine
A traditional North African stew originating from Algeria, featuring tender lamb and flavorful spices.
Ingredients
- β1 pound boneless shoulder, cut into 2-inch pieces Lamb
- β2 teaspoons ras el hanout spice blend AlgerianAvailable at Middle Eastern markets or online
- β1 tablespoon preserved lemon, finely chopped Piquantoptional
- β1 large onion, chopped Tagine
- β2 cloves garlic, minced Charred
- β2 tablespoons Olive oil
- β2 cups Chicken broth
- β2 tablespoons Honeyoptional
Instructions

Heat the oil in the bottom of a large clay or ceramic tagine over medium heat.

Add the chopped onion and cook until browned, about 8 minutes.

Add the lamb and cook until browned on all sides, about 5 minutes.

Add the ras el hanout, preserved lemon, garlic, and chicken broth.

Bring to a boil, then cover and transfer to the oven.

Bake at 300Β°F (150Β°C) for 1 1/2 hours, or until the lamb is tender.

Stir in the honey, if using.

Season with salt and pepper to taste.
