French Galette with Piquant Tofu Filling
A twist on the classic French galette, this recipe features a flavorful piquant tofu filling, perfect for a satisfying vegetarian meal.
Ingredients
- β1 block Tofufirm, drained, and crumbled
- β1 cup Piquantchopped, mixed pepper and onion blend
- β1 sheet Galettehomemade or store-bought
- β2 cloves Garlicminced
- β1/4 cup Fresh parsleychopped
- β1/4 cup Feta cheesecrumbled
- β1 tsp Saltto taste
- β1/2 tsp Black pepperto taste
- β2 tbsp Olive oilfor brushing

Preheat oven to 375Β°F (190Β°C).

Roll out the galette sheet to a thickness of 1/8 inch.

In a pan, heat 1 tablespoon of olive oil over medium heat. Add the minced garlic and cook for 1 minute.

Add the chopped piquant to the pan and cook for 3-4 minutes, until softened.

Crumb the tofu and add it to the pan. Cook for 2-3 minutes, until lightly browned.

Sprinkle the chopped parsley and crumbled feta cheese over the tofu mixture.

Season with salt and black pepper to taste.

Brush the edges of the galette with the remaining 1 tablespoon of olive oil.

Spoon the tofu filling onto one half of the galette, leaving a 1-inch border around the edges.

Fold the other half of the galette over the filling, pressing the edges to seal.
