Greek Lamb Skewers
A flavorful and refreshing dish that combines the rich taste of lamb with the brightness of a Greek-inspired marinade.
Ingredients
- β1 1/2 pounds Lamb (leg or shoulder), cut into 1-inch cubesMake sure to trim any excess fat
- β1/4 cup Piquant (such as oregano, thyme, and rosemary) olive oilCombine oregano, thyme, and rosemary in a bowl
- β2 tablespoons and 2 tablespoons Juicy (such as lemon juice) and Greek yogurtUse a 2:1 ratio of lemon juice to yogurt
- β12-15 wooden skewers SkewersSoak skewers in water for at least 30 minutes
- βto taste Salt and pepperAdjust seasoning to taste
- β2 cloves Garlic, mincedMince garlic just before using

Preheat grill to medium-high heat.

In a large bowl, combine lamb cubes, piquant olive oil, juicy and Greek yogurt mixture, salt, pepper, and garlic.

Mix well to coat lamb evenly.

Thread lamb cubes, cherry tomatoes, and onions onto skewers.

Brush skewers with a little more piquant olive oil.

Grill skewers for 8-10 minutes per side, or until lamb reaches an internal temperature of 145Β°F for medium-rare.
