Collard Greens with Welsh Rarebit
A twist on the classic Welsh dish, adding some spicy piquant flavor to the greens.

Ingredients
- β1 bunch collards
- β1/4 cup piquant
- β1/2 cup Welsh
- β1 large skillet

Instructions

Bring a large pot of water to a boil. Blanch the collards for 5 minutes, then drain.

In a skillet, melt 2 tablespoons of butter over medium heat.

Add 1/4 cup of piquant to the skillet and cook for 1 minute.

Add 1/2 cup of Welsh to the skillet and stir to combine.

Add the blanched collards to the skillet and toss to coat with the Welsh Rarebit sauce.
