Canadian Dal Stew
Hearty Canadian-inspired stew made with dal, toor, and pleasantly flavored spices.

- β1 cup dal
- β1 cup toor
- β1 medium onionchopped
- β2 inches gingergrated
- β3 cloves garlicminced
- β2 tablespoons coconut oil
- β1 teaspoon curry powder
- β1/2 teaspoon salt

Instructions

Heat oil in a large pot over medium heat.

Add onion and cook until softened, about 5 minutes.

Add ginger and garlic and cook for an additional 1-2 minutes.

Add dal and toor, and stir to combine.

Add curry powder and salt, and stir to combine.

Pour in 4 cups of water and bring to a boil.

Reduce heat to low and simmer, covered, for 20-25 minutes, or until dal and toor are tender.
